No. The Eucharist is not presented as a parable in Scripture. In particular, Jesus’ teaching in John 6 is presented as direct teaching, not as a parable.

John 6 is especially important

Jesus says:

“I am the bread of life.” — John 6:35

Then He becomes increasingly explicit:

“The bread that I will give for the life of the world is my flesh.”
— John 6:51

And then:

“Unless you eat the flesh of the Son of man and drink his blood, you have no life in you.”
— John 6:53

Jesus doesn’t then say, “Let me explain what this parable means.”

Instead, the Gospel says many of His disciples were disturbed by the teaching:

“This is a hard saying; who can listen to it?” — John 6:60

And some disciples left Him:

“After this many of his disciples drew back and no longer went about with him.”
— John 6:66

Jesus then asks the Twelve:

“Do you also want to go away?” — John 6:67

Peter doesn’t say, “We understand that you’re speaking symbolically.” He says:

“Lord, to whom shall we go? You have the words of eternal life.”
— John 6:68

And at the Last Supper, Jesus is even more direct

Matthew records:

“This is my body.”
“This is my blood of the covenant.”
— Matthew 26:26–28

Mark 14:22–24 and Luke 22:19–20 likewise record Jesus identifying the bread and w**e with His body and blood.

And Paul, writing about the Eucharist, says:

“The cup of blessing which we bless, is it not a participation in the blood of Christ? The bread which we break, is it not a participation in the body of Christ?”
— 1 Corinthians 10:16

So from a Catholic perspective, the Eucharist is not a parable that Jesus later failed to explain. The Church understands John 6 and the Last Supper as direct Eucharistic teaching, reinforced by Paul’s teaching about participation in Christ’s Body and Blood.
