“You want to drink tea just like you want to eat food: in season,” Flunder-McNair explained. “Tea, to me, is such an ancient, original form of medicine.”

When using fresh herbs in tea — like rosemary — they can be less potent than the dried version of the spice. If using a dried herb, she said to be sure to activate it beforehand by rubbing them in your palms to release the natural oils. She chose to add rosemary to this tea recipe since she had an abundance of it in her farm.

Drinking tea in the morning before breakfast can help with digestion, the founder said, and being sure to have a cup at least 20 minutes before your first meal is essential. A cup before bed can help with sleep as well.

“We’re using it as medicine,” she said of tea. “To get the benefits from tea, it’s best to have it three times a day.”
