* Bacon, cooked to taste
* ½ of a yellow onion, thinly sliced

* A pinch of salt

Cheddar, Apple, Arugula, & Dijon Mustard Grilled Cheese

* About ½ of an apple, thinly sliced
* Dijon mustard, to taste
* Arugula, to taste

For Both
* 2 tablespoons softened butter
* 4 slices sandwich bread

🦌 Deer Creek Pro Tip: Use a mandolin to slice your apples and onions!

How to Make Them:

Bacon, Blue, & Caramelized Onion Grilled Cheese
1. Preheat your oven to 400°F and line a baking pan with parchment paper or foil. Place strips of bacon in a single layer to allow for even cooking (extra bacon can be saved for another recipe or popped in the freezer for future use). Cook the bacon for 15 to 20 minutes, depending on your desired crispiness.
2. While the bacon is cooking, melt 1 tablespoon of butter in a fry pan over medium low heat. Add the thinly sliced onions and a pinch of salt to the melted butter. Sauté over medium low heat for about 20 minutes to caramelize, stirring frequently for even browning.
3. Assemble your sandwich: layer The Blue Jay, the bacon, and the caramelized onions between two slices of bread.

Cheddar, Apple, Arugula, & Dijon Mustard Grilled Cheese
1. Assemble your sandwich. Spread the Dijon on one slice of bread. Layer the Cheddar and sliced apple, and arugula on the other slice. Top with the slice you spread the mustard to help the arugula stick and stay inside the sandwich.

Finish Them Up Together
1. Butter the outside of the top slice of each sandwich with ½ tablespoon of butter.
2. Melt the remaining tablespoon of butter in a pan over medium to medium-low heat. Place both sa

🥗 What We’re Having: Fresh Salads From Our Gardens

Straight from harvest to table — our founders turned an afternoon in the garden into the perfect summer evening meal. 🌿

This one starts with a base of beet greens and red Russian kale, topped with shaved fennel, feathery fennel fronds, fresh oregano, shaved Vat 17, and lightly salted pistachios. A drizzle of lemon balsamic vinaigrette and a few peppery nasturtiums finish bring it all together.

Simple, seasonal, and grown just steps away. 🌱✨

Spring produce really doesn’t need much to shine, and this All Things Spring Salad proves it! 🫛🌱🌷 Crisp snap peas, tender asparagus, and peppery radishes come together with toasted hazelnuts and a bright lemon dressing, all finished with the sweet and nutty notes of The Fawn. It’s fresh, vibrant, and truly spotlights the flavors of the season.

What You’ll Need:
- 1/2-1 cup The Fawn, finely shredded
- 2 cups snap peas, cut in thirds
- 1 bunch asparagus, woody stems removed and cut in thirds
- 6 radishes, julienned
- 1/2 cup pickled red onions, chopped
- Zest of 2 lemons
- 2 ounces of microgreens
- 1 cup chopped hazelnuts, toasted in 1 tablespoon butter

For the dressing:
- 1/2 cup olive oil
- Juice of 1 lemon
- 1 tablespoon coarse ground mustard
- 1 tablespoon honey
- 1 teaspoon dried thyme
- A pinch of salt and fresh cracked pepper

Directions:
1. Wash, chop, shred, and prep your salad base ingredients.
2. To toast the hazelnuts, melt the butter in a pan over medium-low heat. Add the chopped hazelnuts and stir frequently until fragrant and lightly golden, about 1–2 minutes. Remove from heat immediately to prevent burning and transfer to a separate dish to cool.
3. While the hazelnuts cool, whisk together all dressing ingredients in a small bowl until fully emulsified.
4. In a mixing bowl, combine all salad ingredients. Pour the dressing over the salad and gently toss until evenly coated. Top with additional shredded cheese and serve.

🦌❤️

We often talk about how to use Deer Creek cheeses for holidays and special occasions, but they’re fab for every day dishes, too! Our team uses them for homemade pizzas, late night quesadillas, classic casseroles, Sunday sandwiches and more. This salad that our brand manager’s partner packed her for work with arugula, leftover shredded buffalo chicken, tomatoes, red onion, and radishes is topped with The Blue Jay. Not for any occasion, just for a really tasty break in the day.

These cheeses might be specialty, but YOU make them special. ✨ How do you use Deer Creek daily?
