Makes the perfect summer dinner! This combo of flavors is just so so good. Follow Kristen Jorgensen for all of my recipes ✨ enjoy!
*What you’ll need:
Tortillas of choice*
1 pound chicken, cubed
1/2 cup BBQ Sauce
Spices: Garlic powder, paprika, oregano, black pepper, salt
-Add your cubed chicken to a bowl.
-Toss with some oil to coat.
-Add in your spices and bbq sauce and stir.
-Let marinate for at least 30 minutes.
-Air fry at 400 for 10 minutes. You can also cook in a pan/bake/grill if you prefer.
-Once chicken has reached internal temp of 165, place in a pan with a little bbq sauce and honey that’s been mixed together and coat the cooked chicken.
*Chipotle elote:
3 cups corn
2 tbsp sour cream
2 tbsp chipotle mayo (I used homemade)
1 tbsp Lime juice (more, to taste)
1/8 tsp Garlic powder
1/8 tsp Chili powder
3-4 tbsp Cotija cheese (and more for topping)
2 tbsp Cilantro (chopped)
Salt to taste
2 tbsp Scallions (chopped)
1/2 jalapeño (chopped, optional)
-Heat corn in a pan, cook for about 3-5 minutes. You can also use grilled corn if you prefer.
-Turner off heat, stir in the other ingredients until combined.
-Assemble your tacos and enjoy!

What you’ll need for my peanut chicken salad:
1 cup shredded chicken (cooked + chopped)
2 tbsp cabbage
2 tbsp carrots
2 tbsp cucumber
2 tbsp bell pepper
2 tsp cilantro
2 tsp scallions
2-3 tbsp peanut sauce (I used homemade)
2-3 tsp lime juice
-Chop all veggies, cilantro and scallions and add to a bowl with the chopped chicken. Add in peanut sauce, lime juice and stir until combined.
*To make rice paper chips just heat up oil and place them in the oil until they puff up. Enjoy y’all!
*If you don’t have rice paper I have served them in lettuce cups too! Both good :)
