Ingredients:
• 2 1/2 cups / 350g raw unsalted whole cashews
• 1/3 cup / 80ml pure maple syrup
• 1 teaspoon / about 2.5g ground cinnamon
• 1/2 teaspoon / about 2.5g fine sea salt

Preheat the oven to 325°F / 165°C. Line one light metal baking tray with parchment paper.

Place the cashews in a mixing bowl. Add the maple syrup, cinnamon and salt. Fold for 25–30 seconds until every cashew has a thin even coating.

Transfer the complete mixture to the tray and spread it into one even layer with small gaps.

Bake for 10 minutes. Remove the tray briefly, turn the cashews once, then return the tray to the center rack and bake for another 6–10 minutes, until deep golden and fragrant.

Cool completely on the tray over a wire rack for at least 30 minutes. Separate any naturally touching pieces after they are fully cool.

TIP: The coating remains soft while hot and becomes crisp as it cools. Do not judge the final crunch straight from the oven.

🍐🍂 4-INGREDIENT MAPLE PEAR CRUMBLE CUPS

Warm tender pears topped with golden maple-oat crumble clusters!

🍐 MAKES: 4 individual crumble cups

🛒 INGREDIENTS

🍐 2 medium ripe-but-firm pears, peeled, cored, and diced / about 340g prepared fruit
🌾 1 cup / about 90g old-fashioned rolled oats
🥜 ⅓ cup / about 85g smooth natural almond butter, fully stirred
🍁 3 tbsp / 45ml pure maple syrup

👩‍🍳 INSTRUCTIONS

1️⃣ Preheat the oven to 375°F / 190°C.

2️⃣ Place exactly four matching 6-ounce / 180ml oven-safe ramekins on one rimmed metal baking tray.

3️⃣ Peel and core the pears.

4️⃣ Dice them into even ½-inch / 1.25cm cubes.

5️⃣ Divide all of the diced pears evenly among the four ramekins.

6️⃣ Add the rolled oats and almond butter to a mixing bowl.

7️⃣ Pour in the maple syrup.

8️⃣ Fold everything together until every oat is coated and moist, loose clusters begin to form.

9️⃣ Don’t blend or mash the mixture into a paste—the loose clusters are what give you that crumble texture.

🔟 Divide the entire oat mixture evenly over the four pear-filled ramekins.

1️⃣1️⃣ Bake for 22–25 minutes, until the pear juices are gently bubbling and the oat topping is golden around the edges.

1️⃣2️⃣ Carefully remove the tray from the oven using oven mitts.

1️⃣3️⃣ Let the crumble cups cool for about 10 minutes before serving. 🍐🍂

💡 TEXTURE TIP: Use pears that are ripe but still firm. Very soft pears can release too much liquid and turn the bottom layer into purée.

🌾 CRUMBLE TIP: Keep the oat mixture in loose clusters instead of pressing it down. This helps the topping bake up with better texture.

❄️ STORAGE: Cover cooled leftovers and refrigerate for up to 3 days.

🔥 REHEAT: Warm briefly before serving if you prefer the pears and crumble topping warm.

🫐 4-INGREDIENT FLOURLESS BLUEBERRY GREEK YOGURT CUPS

Creamy, lightly sweet, and filled with juicy blueberries in every bite!

🧁 MAKES: 6 yogurt cups

🛒 INGREDIENTS

🥣 2 cups / 480g thick plain full-fat Greek yogurt
🥚 2 large eggs
🍯 ¼ cup / 85g honey
🫐 1 cup / 150g fresh blueberries

👩‍🍳 INSTRUCTIONS

1️⃣ Preheat the oven to 340°F / 170°C.

2️⃣ Place exactly 6 plain paper liners in a standard 6-cup muffin pan.

3️⃣ Add the Greek yogurt to a large mixing bowl.

4️⃣ Crack in exactly 2 eggs and add the honey.

5️⃣ Whisk until completely smooth with no visible egg streaks.

6️⃣ Gently fold in the fresh blueberries, keeping them as whole as possible.

7️⃣ Divide the complete mixture evenly between the 6 liners.

8️⃣ Bake for about 25 minutes, until the tops are lightly golden and the centers are set with only a slight natural wobble.

9️⃣ Let them cool completely.

🔟 Refrigerate for at least 2 hours before serving.

1️⃣1️⃣ Carefully peel away the paper liners after chilling and enjoy that creamy blueberry center. 🫐

💡 TEXTURE TIP: Use thick Greek yogurt and fresh, dry blueberries. Thin yogurt or wet frozen berries can make the centers watery.
