Buttermilk Pancakes Perfect for 2
52g Buttermilk Blend Powder
180g bread flour
2 1/4 tbsp sugar 28g
1 3/4 tsp baking powder
3/4 tsp baking soda
1 1/4 tsp salt
1 1/2 cup milk or water
3 tbsp oil
2 tsp vanilla bean paste

Conchas
Ingredients
Tangzhong
60 ml water
60 ml whole milk
23g bread flour
Dough
Cooled Tangzhong
120 ml whole milk (warm 110-115 degrees)
8g yeast
65g sugar
15g buttermilk powder
1 egg
350g bread flour
1 tsp salt
58g softened butter
Streusel Topping
100g softened butter
100g powdered sugar
120g flour
5g cacao powder
10g vanilla bean paste
pinch of salt
Instructions
Tangzhong
1) In a suacepan, mix flour, milk, and flour
2) Heat over medium heat while whisking until it thickens to a paste.
3) Allow to cool to room temp.
Dough
1) In a small bowl add warm milk, sugar and yeast, set aside for 5-10 minutes.
2) In a stand mixer add flour, salt, buttermilk powder, milk, and egg.
3) Using a dough hook start mixing on medium speed and gradually speed up adding softened
butter a little at a time. Mix until the dough is not sticky and it passed the window pain test.
4) Cover the bowl and place in a warm place until it doubles in size about 1.5 - 2 hours
5) once doubled in size split into 8 equal peices. shape each piece into a tight ball. place
each ball on a lined cookie sheet cover and set a aside. Mean while start preheating oven to
350 degrees
6) In a small bowl combine flour, sugar, salt vanilla, and butter. mix until well combined it
should feel like wet sand or play-do. (if you are doing different colors or flavors then divide
your
streusel into the amount you need. add your food coloring, cacao powder or flavors you
would like.
7) roll your stereusel into balls and using a plate and two pieces of plastic press the streusel
into a disk. place each disk on each dough ball and score.
8) bake your conchas for 35 minutes and let cool before you enjoy.
