The Chef's House in Augusta, Georgia is a pink cottage on a four-lane strip of car washes and paint stores. Inside, it's a lunch-only Southern buffet run by Chef George Darko and his wife Tammie. He's a real chef, not a home cook playing restaurant. A food writer once said a meal here is a tour de force of professional talent, and the regulars, who make up three quarters of the room, would agree.

The buffet is small on purpose: two or three entrees, a few sides, soup, salad bar, cobbler. Chef Darko walks out of the kitchen himself to refill the pans. The menu changes every day. Thursday is salmon day, and Augusta knows it.

Fried chicken, collard greens, peach cobbler, sweet tea. Weekdays, 11 to 4. That's it.

Some buffets are about quantity. This one's about a chef who cares.
