parcel arrived today with some “no meat burger classic patties “ in there amongst other things

….. trying to make the best of what I had in the fridge / pantry - (it’s struggle city this week 😬💲)

Sweet and sour burger salad !

Grilled up a few patties chopped them into some left over rice , pineapple, green onions, Red onion, carrot, lettuce and jalapeños …. Sauce with fresh ginger , chilli , date syrup, salt, lime , seasame 👌 filling cheap and delicious 🤤

Super easy, quick and delicious! You too can make using Pataks butter chicken paste , to directions on the pack using instead: tofu pieces and coconut cream 👌 (hint! - make it even easier by using packet rice 🌾)

Banana blossom “fish” and mushroom “calamari”.

Have to be completely honest , the “fish” needs a bit of tweaking… “calamari” on the other hand 🤤🤤🤤

Carrots!!! They are extremely cheap right now, what are you all making with yours ??

Carrot soup 👌 topped off with ZENZO vegan sour cream

* onions garlic and ginger fried off in a pan
* roast carrots in the oven
* add all together with your favourite plant based stock
* whiz it up
* add a tiny shake of curry powered to jazz it up
*top with zenzo sour cream

annnndddd boomffaaaaaaa!!!! You have a tasty cheap meal 🤤🤤🤤

Tangelo and avocado salad 👌

it’s bangin!

📍layer coz lettuce on a plate
📍sprinkle on some mung bean sprouts
📍in a bowl mix two tangelos one avocado , some mixed herbs fresh from your garden, salt and pepper, sunflower seeds , pumpkin seeds , sesame seeds , chopped red onion and mix all together
📍plonk the tangelo mix on-top of the lettuce

💥 🤯 flavour explosion 🤯 💥 enjoy with your favourite vinaigrette or lime juice!
