🌿 Spinach Pesarattu + Mint Yogurt Chutney
A simple, protein-rich breakfast that doesn’t need 10 different items on your plate! 💚
🥣 For 1 serving
Spinach Pesarattu
• Green moong dal – ½ cup
• Spinach – 1 cup, chopped
• Ginger – ½ inch
• Green chilli – ½–1
• Cumin – ¼ tsp
• Salt – as needed
• Oil – 1 tsp
Mint Yogurt Chutney
• Thick curd – ½ cup
• Mint – ¼ cup
• Coriander – 2 tbsp
• Green chilli – ½
• Roasted cumin powder – ¼ tsp
• Salt – as needed
👩🍳 How to make
Soak moong dal for 4–6 hours. Grind with ginger, chilli, cumin and salt into a smooth batter. Mix in chopped/blended spinach and make 1–2 pesarattus on a hot tawa using minimal oil.
For the chutney, blend mint, coriander and chilli, then mix with curd and roasted cumin powder.
