Caramelized Sweet Potato Post-Workout Plate:
1 large sweet potato (Im making about 6 as a meal prep)
Olive oil
Salt
Black pepper
Paprika
Garlic powder
Onion powder
Preheat the oven to 360°F.
1. Wash and clean the sweet potato, then cut it in half lengthwise. Drizzle with olive oil and season generously with salt, pepper, paprika, garlic powder, and onion powder.
2. Place the sweet potato flesh-side down on a baking sheet and bake for about 1 hour, or until completely tender and deeply caramelized.
3. Remove from the oven and leave it on the hot baking tray for a few minutes while it cools slightly. This helps the cut side caramelize even more.
