At the heart of the Can Quince estate lies an original olive oil mill—a truly remarkable feature. The history of the olive mill (known as a *trull* in the local Ibizan dialect) on the island dates back over two thousand years, with records of olive oil production reaching as far back as the 3rd century BC, during the Punic-Roman era. Traditionally, pressing the family’s olives was a communal event—a source of joy and celebration within the home.

The settlement of Balàfia originated as an ancient Muslim farmstead in the XIII century; as an agricultural community, it needed to be entirely self-sufficient. To avoid reliance on the outside world, families shared essential communal resources, including cultivated fields, wells, bread ovens, and their own olive mills.

In this setting, olive oil was more than just food; it was also used for lighting and food preservation, making the *trull* the economic engine of the farmstead...
