🍖 Slow-Roasted Honey Chili Mutton Thighs
Ingredients:
●Mutton thighs
●Tomato paste
●Chili paste
●Butter
●Black pepper
●7-spice seasoning
●Salt
●Honey
●Onions, cut into rings
●Potatoes, cut into cubes
Method:
1. Mix tomato paste, chili paste, melted butter, black pepper, 7 spices, salt, and honey to make the marinade.
2. Rub the marinade generously all over the mutton thighs. For best flavor, marinate for at least 4 hours, preferably overnight.
3. Arrange the onion rings and potato cubes in a large roasting tray.
4. Place the marinated mutton thighs on top of the vegetables.
5. Cover the tray tightly with aluminum foil.
6. Roast in a preheated oven at 160°C (320°F) for about 3 hours, or until the mutton is very tender.
7. Remove the foil during the last 20–30 minutes and increase the heat to 200°C (400°F) to brown and caramelize the outside.
8. Let the mutton rest for 10–15 minutes before serving.
🔥 Tip: If the tray becomes dry during cooking, add a little hot water or stock around the meat—not directly over the marinade. The onions and potatoes will absorb all those delicious juices.

Malunggay Pandesal
Ingredients:
●3¼ cups all-purpose flour
●1 cup warm milk
●⅓ cup sugar
●2 tsp instant dry yeast
●1 tbsp moringa (malunggay) powder
●1 large egg or 2 small eggs
●¼ cup softened butter
●1 tsp salt
Breadcrumbs, for coating
Instructions:
In a large bowl, combine the warm milk, sugar, and yeast. Let it sit for about 5 minutes.
Add the egg, softened butter, and moringa powder. Mix well.
Add the flour and salt gradually, mixing until a soft dough forms.
Knead for about 8–10 minutes, until the dough becomes smooth and elastic. It should be soft and slightly tacky but not overly sticky.
Place the dough in a lightly greased bowl. Cover and let it rise for 1–1½ hours, or until doubled in size.
Punch down the dough and divide it into equal portions. Roll each piece into a ball or your preferred pandesal shape.
Roll each piece generously in breadcrumbs and arrange on a baking tray.
Cover and let them rise again for 30–45 minutes.
Bake in a preheated oven at 180°C (350°F) for about 15–20 minutes, or until lightly golden.
Cool slightly and enjoy your soft, fluffy Malunggay Pandesal! 🌿🥖
Tip: For a stronger malunggay flavor and color, you can increase the moringa powder to 1½–2 tbsp, but 1 tbsp gives a milder flavor that's usually more kid-friendly.

🍗 Chicken Pastil
Ingredients:
4 cups cooked, shredded chicken breast
3 tbsp butter
3 tbsp ghee
4 medium onion, thinly sliced
6 cloves garlic, minced
3 tbsp soy sauce
1 tbsp tomato paste
2 cups water or chicken broth
½ tsp turmeric
1 tsp paprika
1 tsp curry powder
½ tsp black pepper
¼–½ tsp chili powder, adjust to taste
Salt, to taste
👩🍳 Instructions:
Sauté the aromatics: Heat the ghee in a pan over medium heat. Add the sliced onion and cook until soft and lightly golden.
Add the minced garlic and sauté for about 30 seconds until fragrant.
Add the shredded chicken, butter and mix well.
Add soy sauce and tomato paste, stirring until the chicken is evenly coated.
Sprinkle in the turmeric, paprika, curry powder, black pepper, and chili powder.
Pour in the water and mix everything together.
Let it simmer covered for 8–12 minutes, stirring occasionally. You want the chicken to absorb the sauce and become slightly dry, not watery.
Taste and adjust salt, soy sauce, or chili as needed.
Continue cooking for another 2–3 minutes until the chicken becomes rich, savory, slightly oily, and flavorful.
🍚 How to serve
Traditionally, serve the chicken over steamed white rice, then top with the flavorful shredded chicken. You can also wrap it in banana leaves for that authentic pastil presentation.
Tip: Since chicken breast can become dry, don't let it cook too long after the water evaporates. The ghee helps keep it moist and gives it a richer flavor.
Today, I cooked this classic Filipino dish made with tender heart, liver, potatoes, bell peppers, and chickpeas, all simmered in a flavorful blend of soy sauce, garlic, onions and blackpepper. Every bite brings a perfect balance of savory, tangy, and rich flavors that make it a favorite in many Filipino homes.
