🥒 Creamy Peanut Butter Cucumber Salad
Ingredients:
• 1 large cucumber, sliced
• ½ small red onion, thinly sliced
• 1 tablespoon peanut butter 🥜
• 1–2 tablespoons mayonnaise
• Juice of ½ lemon 🍋
• A pinch of black pepper
• A little salt, to taste
Method:
Add the cut cucumber and red onion to a jar. Then, add the other ingredients, peanut butter, mayonnaise, lemon juice, black pepper and salt until creamy.
Mix well, just shake, toss everything together until well coated.
