And here we have the final product!
You know it's done when your jar goes from smelling like last night's cabbage rolls to beautiful sour and delicious fermented goodness!

You can let it sit and ferment and sour longer if you want it to taste more sour. But when it's ready for you, put it in the fridge and eat it within a few months.

This is after two days of fermenting. Not much is happening, but very slowly the aerobic bacteria are dying, and the anaerobic bacteria are growing.

Easy Peezy!
Just put all of the cabbage and its juices in the jar, and make sure all of the solids stay in the liquids. Otherwise you might get mold.

I indulged and got myself some of those fermenting weights. They're not necessary, but they do make it easier to keep everything under the waterline. Before I bought them, I used crystals or stones that I found at the river.

Making sauerkraut at home is super easy!
After the cabbage has sat in the salt and released some of his liquids, it's ready to go in the jar, and start fermenting.

Sauerkraut is one of the healthiest foods for us to eat. The cabbage alone is so good for our gut and to feed the flora, but adding bacteria in there with it? Brilliant.
Sauerkraut is very easy and inexpensive to make at home. All you really need is cabbage and salt.
This is going to be a five part series of videos that takes you from start to finish!

As you may well know, mint grows like a w**d. If left unchecked, it will take over your whole garden. Why not let it take over a little patch?
Cut it right as it's starting to flower, bunch it, hang it upside down for a couple of weeks and let it dry. Now you have free mint tea for the whole winter!

Can you do this with other herbs?

If you're growing lettuce and the plants are bolting right now, pick them and put them in water.
This sweet one is going on day four and not a wilted leaf in sight. It's even the same water as Sunday!

I ended up with 4 L of beautiful, delicious, and nutritious chicken stock! FOR FREE!!

If you don't already do this; in the freezer save all of your onion ends, carrot scrapings, celery leaves, ginger toes, mushroom bits, and herb stems!
And you can throw in your favourite leftover bones for flavour and marrow.

Strain and store. I put 3 L in the freezer and left one in the fridge. You can warm up a cup on a chilly night to drink, or use it for cooking!
