✨🍑August’s Golden Orchard, Preserved in a Jar 🍑✨ Save Recipe Below l.👇🏼

There is something so lovely about gathering the sweetness of the season and preserving a little of it for the days ahead.

Made simply with sun-ripened peaches, a touch of honey, fresh lemon, and vanilla, these golden peach preserves capture the warmth of August in every spoonful.

Spread over warm, freshly baked scones, tucked between delicate cake or tea cake layers, or simply spooned onto morning toast. 🤎

Golden Peach Preserves

Ingredients

4 cups (600g) ripe peaches, peeled & diced
¼ cup (60ml) honey
1 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp pure vanilla extract
Pinch of sea salt
1 tbsp water

Method

Add the peaches, honey, lemon, zest, vanilla, and sea salt to a saucepan. Simmer over medium heat for 10–12 minutes, until soft and juicy.

Gently mash some of the peaches, leaving plenty of beautiful pieces for texture.

Simmer for another 1–2 minutes, until thickened.

Allow to cool completely before spooning into a glass jar and refrigerating.

Makes approximately 1½ cups.

How to master a beautifully tender gluten + grain-free tea cake sponge ✨ SAVE THIS 🤎

The secret is not simply in the ingredients—it is in the technique.
For my Bloomery Tea Cake Sponge, I separate the eggs and whip the whites with a touch of cream of tartar until they reach soft, glossy peaks.

Then comes the most important part:
Fold gently.

Add the whipped whites to your batter in 2–3 additions, using a light hand to preserve as much of that beautiful air as possible.

That trapped air is what helps create a sponge that is delicate, tender and beautifully light—even without traditional flour. 🌸

A few of my master tips:

♡ Whip the whites in a completely clean bowl.
♡ Stop at soft, glossy peaks rather than whipping them too stiff.
♡ Fold in 2–3 additions instead of all at once.
♡ Use slow, sweeping folds rather than stirring.
♡ Once the batter is combined, stop. Overmixing deflates the air you worked so carefully to create.

Then spread your batter gently into the prepared pan and bake just until lightly golden and springy to the touch.

Is anyone else already dreaming of apple season? 🍎🍂

As summer gently begins to soften, I always find myself longing for slower mornings, crisp country walks, cozy sweaters, steaming cups of tea, and every beautiful treat filled with rich, velvety apple butter.

There is something so comforting about gathering apples, filling the kitchen with the aroma of cinnamon, and preserving little jars of autumn to enjoy throughout the season. It truly feels like the beginning of home.

If you’re counting down the days until orchard visits and tea-time baking, this simple apple butter is one of my favorite recipes to make each year. It becomes the heart of cakes, tarts, tea cakes, scones, toast, and so many beautiful autumn traditions.

🍎 Simple Apple Butter

Ingredients
• 4 lb (7–8 large) Granny Smith apples, peeled and chopped
• 2 tbsp apple cider vinegar
• 2 tbsp lemon juice
• 2 tsp ground cinnamon
• Pinch of sea salt
• 1 tbsp gelatin (optional, for extra richness)

Instructions

1. Add the chopped apples and all remaining ingredients to a large saucepan.
2. Bring to a gentle boil, then reduce to low heat.
3. Cover slightly ajar and simmer for 2–3 hours, stirring occasionally, until the apples become incredibly soft and deep caramel in colour.
4. Blend until perfectly smooth using an immersion blender or high-speed blender.
5. Cool completely before transferring to glass jars.

Store in the refrigerator for up to 2 weeks or freeze for later.

Here’s to slower days, brisk morning walks, warm mugs of tea, and beautiful little moments gathered around the table. Autumn is almost here, and I couldn’t be more excited. 🤎🍂 🍎

🍒🍰 Some cakes aren’t meant to fit neatly into a category…

This one lives somewhere between a classic Neapolitan and an elegant Black Forest—soft vanilla almond sponge, rich chocolate almond sponge, clouds of coconut cherry whip, and generous layers of black cherry jam tucked between every slice.

Romantic.
Nostalgic.
Beautifully timeless.

And perhaps the sweetest part? It’s entirely dairy-free, grain-free, gluten-free, and naturally sugar-free—proof that the most elegant desserts can be every bit as nourishing as they are beautiful.

This is the kind of cake I imagine appearing on a linen-covered table, surrounded by fresh roses, quiet conversation, and a pot of tea poured slowly.
