Because spooky snacks, cookies turned into spiders & strawberries dressed up like little ghosts? I’m IN.

90% of the time, my kids are eating healthy, home-cooked meals and snacks made with ingredients I feel good about. But I also want them to have the fun stuff. The themed treats. The holiday magic. The memories they’ll hopefully look back on one day. 🥹🤍

It’s all about balance over here - and making childhood feel a little magical. ✨

The easiest fall tray bake 🍂🤎

One of my go-to dinners when I want something easy, delicious, full of seasonal veggies, and most importantly… something I know my kids will actually eat. Everything goes onto one pan, into the oven, and dinner is done 🙌🏼

**EASY FALL CHICKEN TRAY BAKE**

**Ingredients**
1 large sweet potato, peeled + chopped
2 cups Brussels sprouts, halved
1 small red onion, chopped
2 cups cauliflower florets *(or any seasonal veggies you have on hand)*
6–8 chicken drumsticks, legs or thighs

**For the veggies:**
2 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp rosemary, dried or fresh
1 tsp thyme, dried or fresh
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika

**My Lazy Girl Chicken Seasoning:**
1 tbsp olive oil
1 tsp salt
½ tsp black pepper
1 tsp rosemary
1 tsp thyme
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika

**Directions**
Preheat your oven to 425°F and line a large baking sheet with parchment paper.

Add all of your veggies to the pan. Drizzle with olive oil and season with salt, pepper, rosemary, thyme, garlic powder, onion powder + paprika. Toss really well so everything is evenly coated.

Add your chicken on top, drizzle with olive oil and season with my *lazy girl chicken seasoning*.

Bake for about 40–45 minutes, or until the veggies are tender and caramelized and the chicken is golden brown and cooked through to 165°F internally.

Easy, cozy + exactly the kind of dinner I want on repeat all fall long 🍂 Save this one for a busy weeknight!
