Eggless Savoiardi (Ladyfingers) for Tiramisu Makes: 20 ladyfingers Ingredients * Unsalted butter – 150 g (softened) * Caster sugar – 100 g * Milk – 140–160 ml (add gradually as needed) * Vanilla extract – 2 tsp * All-purpose flour – 240 g * Cornflour – 40 g * Baking powder – 1 tsp * Baking soda – ¼ tsp * Icing sugar – for dusting Method 1. Preheat the oven to 180°C. Line a baking tray with parchment paper or a silicone mat. 2. In a large bowl, cream the butter and sugar for 8–10 minutes until pale and fluffy. 3. Add the vanilla extract and mix well. 4. Sift together the all-purpose flour, cornflour, baking powder, and baking soda. 5. Add the dry ingredients to the butter mixture and mix until it resembles coarse crumbs. 6. Gradually add 140–160 ml milk, mixing until you get a smooth, thick, pipeable batter. It should not be runny and not too stiff. Do not overmix. 7. Transfer the batter to a piping bag fitted with a 12–15 mm round nozzle. 8. Pipe strips about 10 cm long, leaving a little space between each. 9. Dust generously with icing sugar. Wait 2–3 minutes, then dust a second time. 10. Bake at 180°C for 15–20 minutes, or until the ladyfingers are nice and golden. 11.
