If a 500-calorie meal can look this good, I’m officially not eating boring “diet food” anymore.

Yesterday I made this low-calorie chicken burrito bowl, and it was seriously one of those meals where you finish the whole bowl and still can’t believe it fits into your calories. It’s packed with seasoned chicken, black beans, zucchini, brown rice, guacamole, pico de gallo, salsa verde, and just enough sour cream and cotija to make every bite satisfying.

It’s a big, filling bowl with around 520 calories, 48g protein, and 23g fiber. I kept all the same ingredients as the original version, just adjusted the portions to make it lighter.

Low-Calorie Chicken Burrito Bowl

Serves 1 | ~520 Calories | ~48g Protein

For the bowl: 4 oz (115g) chicken breast, cubed, ⅓ cup cooked brown rice, ⅓ cup black beans, 1½ cups chopped zucchini, ½ cup pico de gallo, 2 tbsp salsa verde, ¼ avocado, 1 tbsp light sour cream, 1 tbsp crumbled cotija cheese, fresh cilantro, and lime wedges.

For the chicken: ½ tsp smoked paprika, ¼ tsp chili powder, ¼ tsp cumin, ¼ tsp garlic powder, ¼ tsp onion powder, salt and black pepper, ½ tsp olive oil, and 1 tsp lime juice.

For the rice: Mix the cooked rice with salsa, chili powder, cumin, garlic powder, lime juice, and a little salt.

Directions: Season the chicken and cook in a skillet with ½ tsp olive oil until golden and cooked through. Finish with lime juice. Season the zucchini and roast at 425°F for 15–20 minutes, until tender and lightly browned. Warm the black beans and prepare the pico de gallo and guacamole. Add the rice and beans to a bowl, then top with chicken, zucchini, pico, salsa verde, and avocado. Finish with light sour cream, cotija, cilantro, and a squeeze of lime.

Tip: Want even more volume? Add extra zucchini or lettuce without adding many calories.

I made these chickpea flour waffles recently and honestly, they turned out so good. Crispy on the outside, packed with spinach and sweetcorn, and made without any added oil. At around 269 calories and 15g protein, they make a really nice light lunch or dinner.

Chickpea Flour Waffles with Spinach & Sweetcorn

Servings: 1
Calories: ~269
Protein: ~15g

Ingredients:

* ⅓ cup chickpea flour
* ¼ tsp salt
* Pinch of black pepper
* ¼ tsp curry powder
* ½ tsp cumin seeds
* 80g frozen spinach, thawed and squeezed dry
* 80g frozen sweetcorn, divided
* Water, as needed
* Sweet chili sauce, for serving

Directions:

1. Mix chickpea flour, salt, pepper, curry powder, and cumin seeds.
2. Slowly add water and whisk into a thick, pourable batter.
3. Stir in the spinach and 40g of the sweetcorn.
4. Preheat a nonstick waffle maker and add the batter. No oil is needed if the surface is well nonstick.
5. Cook until golden and crisp and the waffle releases easily.
6. Serve with the remaining sweetcorn and a little sweet chili sauce.

Tip: Make sure you squeeze the spinach really well after thawing. Too much moisture can make the waffles soft and difficult to remove.

350g chicken breast, finely diced
350g chicken thighs, trimmed and finely diced
30ml soy sauce
30ml rice wine
1 tbsp oyster sauce
30g brown sugar (or brown sugar alternative)
20g chili bean paste (Doubanjiang or Gochujang)
1 chicken stock cube, crumbled
1 tsp black pepper
5 garlic cloves, minced
1 tsp grated ginger
200g green beans, trimmed and cut into pieces
2 mild red chilies, sliced
600g cooked white rice
4 eggs
Sesame seeds, for garnish

Directions

Heat a large skillet over medium-high heat and lightly coat with cooking spray or a little oil. Cook the garlic and ginger for about 30 seconds until fragrant. Add the chicken and cook for 6–8 minutes until browned and fully cooked. Stir in the soy sauce, rice wine, oyster sauce, brown sugar, chili bean paste, chicken stock cube, and black pepper, mixing until everything is well coated. Add the green beans and sliced chilies and cook for another 2–3 minutes until the beans are tender-crisp. Meanwhile, fry the eggs to your liking. Divide the cooked rice among four bowls, spoon the chicken mixture over the top, add a fried egg to each serving, and finish with a sprinkle of sesame seeds.
