Simple Herbal Vinegars
Top Tips
Stick to a ratio: use the ratio of ½ cup fresh herbs (or ¼ cup dried) to 2 cups white wine or red wine vinegar, no matter what herb blend you're using.
Try add-ins: whole spices like juniper berries, fennel seeds, black peppercorns, coriander, and even dried, food-grade rose petals are just a few supporting spices that add richness and depth. For 2 cups vinegar, use anywhere from 1 teaspoon to 1 tablespoon of whole seeds. For lighter, fluffier items, like rose petals, you can increase that by a couple tablespoons.
Stick to the fridge: while some methods state to use the sun for a few weeks, using the fridge will take longer but prevent any funkiness or possible mold if using fresh herbs.
Decant into a bottle: it's easiest to infuse the vinegar in a wide-mouth jar, like a canning jar, and then decant into a pretty bottle if you want to gift it. Decorating it with a pretty label and maybe tying a sprig of herbs!
How to Store
Storage: keep in a cool, dry place for up to a year. To prevent any uncertainty, the vinegar can be stored in the fridge and make sure to toss it if there's any sign of mold in the container.
White wine vinegar: is a cost-effective vinegar with a light flavor that is best for savory applications.
White balsamic vinegar: will be sweeter than white wine vinegar and is wonderful to use with fruits or for a sweeter flavored vinegar.
Champagne vinegar: while a more expensive vinegar will add a unique, light flavor. Taste it before using it to see how you think it will complement your desired flavors.
Balsamic vinegar: You can use balsamic but I don't care to infuse with it because on it's own and it would overpower most flavors.
Remember it's your own imagination that limits when it comes to infusing ingredients.
In spring and summer one of my favorite is chives and chive blossoms: these give an onion flavor to dishes and chive blossoms will make a beautiful purple vinegar I make mine in white wine vinegar and use it on salads actually I don't even need the oil because it's that good.
Uses for Flavored Vinegar
Mix with olive oil for a salad dressing
Sprinkle on roasted veggies
Drizzle on steamed veggies
Marinade meat, poultry, or fish
As a dressing for pasta salad
