The most effective way to add fiber to dinner is often the least visible one.
This pink pasta gets its color — and its substance — from cooked beetroot and cannellini beans, blended into a silky sauce with cashew ricotta and nutritional yeast. Two fiber-rich whole foods, entirely undetectable at the table, finished with lemon zest and basil.
INGREDIENTS
380g fusilloni pasta
150g tomato puree
Large pinch of salt and pepper
3 tbsp vegan or cashew ricotta (blend soaked raw cashews with lemon juice, garlic, and a pinch of salt)
Extra virgin olive oil
3 tbsp nutritional yeast
350g cooked beetroot
½ tsp garlic powder
1 tin cannellini beans, drained
Lemon zest and basil, to garnish
Splash of vinegar (for cooking the beets)
DIRECTIONS
Simmer washed, unpeeled beets in water with a splash of vinegar, covered, for 30–50 minutes until fork-tender. Cool slightly, then rub the skins off under cold running water.
Cook the pasta in salted boiling water for around 11 minutes.
Blend the beans, beetroot, a large dash of salt, the garlic powder, 2 tbsp olive oil, nutritional yeast, ricotta, tomato puree, and 2 ladles of pasta water until smooth.
Toss the drained pasta with the sauce, divide between 3 bowls, and garnish with lemon zest, pepper, and basil.
A weeknight dinner that quietly works harder than it looks.

Ingredients:

Some viral recipes deserve the attention — and this one earns it with a remarkably short ingredient list.
Rice paper "mochi" wraps a filling of coconut yogurt, chia seeds, and Juice Plus+ Strawberry Complete around fresh strawberries, then sets in the freezer for an hour. The result is a chewy, naturally sweet frozen dessert with no baking, no refined dessert mixes, and about fifteen minutes of hands-on time.
INGREDIENTS
2 rice paper sheets
½ cup unsweetened coconut yogurt
1 tbsp natural sweetener (agave or honey)
1 tbsp chia seeds
