Meet Psyllium Husk πΎ
One of those ingredients you've probably seen on a label but maybe never quite understood.
It comes from the seeds of the Plantago ovata plant, and once mixed with liquid, it swells into a gel-like texture. That one property makes it a go-to for gluten-free baking, where it helps bind ingredients together (something gluten usually does).
A little goes a long way, most people add it into bread, crackers, or baked goods rather than eating it on its own.
