* 28 g mozzarella
* Tomato
* Oregano
* ~40g protein – supports muscle maintenance and keeps you fuller for longer
* Source of fibre – from the oats, almond flour, sweetcorn and tomato
* Rich in calcium – from the mozzarella
* B vitamins + selenium – mainly from the egg and chicken
* Antioxidants – tomato provides lycopene, plus oregano contains antioxidant compounds
* Balanced & filling – protein + healthy fats + a moderate amount of carbs

✨ 50–70g erythritol or monk fruit sweetener
🥄 1 tsp baking powder

🧀 150g blended cottage cheese (or light cream cheese)
🍋 Lemon zest
✨ Sweetener to taste
Method:
1. Preheat oven to 175°C (350°F).
2. Mix all dry ingredients.
3. Whisk together the eggs, yogurt, butter, lemon juice, zest, and vanilla.
4. Combine wet and dry ingredients until smooth.
5. Pour half the batter into a lined loaf pan.
6. Spread the creamy filling over the batter.
7. Top with the remaining batter.
8. Bake for 40–50 minutes, until golden and set.
9. Let cool completely before slicing.

• 1 cup (250g) plain Greek yogurt
• 1 cup chocolate protein powder (about 100-120g)
• 2 tbsp unsweetened cocoa powder
• 80g dark chocolate, melted (for coating)
Method
1. Mix the Greek yogurt, protein powder, and cocoa until a thick dough forms.
2. Roll into 8-10 bite-sized balls (or shape into bars).
3. Place on a tray and chill in the freezer for 15-20 minutes.
4. Dip each bite into the melted dark chocolate.
5. Refrigerate until the chocolate sets.

Trust me… no one will guess there’s cottage cheese inside. 🤭
Ingredients
• 1 cup (225g) cottage cheese
• 2 eggs
• ½ cup unsweetened cocoa powder
• ¼ cup maple syrup (or honey)
• 2 tbsp peanut butter (I used natural peanut butter)
• ¼ cup dark chocolate chips (+ extra for topping)
• 1 tsp vanilla extract
• Pinch of salt
• Chopped walnuts for topping
Method
1. Preheat oven to 175°C / 350°F.
2. Blend the cottage cheese, eggs, maple syrup, peanut butter and vanilla until completely smooth.
3. Add the cocoa powder and salt. Mix until combined.
4. Fold in the chocolate chips.
5. Pour into a parchment-lined loaf tin.
6. Top with extra chocolate chips and chopped walnuts.
7. Bake for 25–30 minutes until the edges are set but the centre is still slightly fudgy.
8. Let it cool before slicing (or chill for an even fudgier texture 🤎).
