Peppers are actually perennials, and with a little prep, you can overwinter them indoors and give them a head start next spring.
Dig them up before a hard frost, prune them back, pot them up, and store them somewhere dark and cool for the winter. You want to keep the soil damp, but not soaking wet or bone dry.
Come spring, wake them back up and get growing!
This only took me 15 minutes. So worth it! Our growing season is so short, I love getting a head start. 🌱

One minute you’re young and cool. The next you’re showing people your calendula harvest.
If you’re up to your t**s in zucchini, you HAVE to try these pickles!
These are seriously SO good, we actually like them better than pickled cucumbers, and they’ve become one of my favourite ways to use up the summer squash takeover.
For the brine:
6 cups water
2 cups vinegar
¼ cup pickling salt
½ cup sugar
Small handful of pickling spice
In each jar:
1 tsp mustard seeds
1 small Thai chili OR ¼ tsp chili flakes
2–4 cloves garlic
2 bay leaves
2–5 sprigs of dill leaf and flower, or honestly just use whatever dill you have
1 clean oak leaf
And don’t skip the oak leaf! Oak leaves are naturally high in tannins, which help keep the squash firm and crunchy instead of turning into a soggy pickle.
Pack your jars with sliced summer squash, add everything else, pour over the brine and pickle away.
Save this one for when your garden starts producing zucchini faster than you can figure out what the hell to do with it!
